Food Quantity for Wedding Reception

How much of each of the following would I need for a wedding reception for 250 people? A. appetizers (available throughout party- 4 hours)): 1. veggie tray 2. fruit tray 3. cheese and crackers 4. chips with salsa and guacamole 5. hummus with pita B. dinner stations (2 hours of party): 1. 3 types of pasta with salad and rolls 2. 2 types of sushi with edamame 3. mini hamburgers with mac and cheese thank you!!

We would suggest the following for your event : 2-3 large veggie trays, 2-3 large fruit trays, 3-4 large cheese trays, 4-5 large bags of chips with approx. 3-4oz of salsa and guacamole per person, 3-4oz of hummas per person and 1 piece of pita per person. 5-6oz of pasta per person, 1 roll per person, 4-5oz of salad per person. 4-6 pieces of sushi per person and 2-3 mini burgers with 4-5oz of mac and cheese per person.
