1 Food Quantities for Wedding Midnight Lunch on Mon Mar 23, 2009 12:26 pm

Hi,

I had done a posting last week regarding how much food is required for a wedding midnight lunch for 200 people that buns, a meat tray with beef, ham and turkey, cheese tray, veggies and dip, pickle tray and fruit tray would be served.

Received a response with the quantities per person as per below:
5-6oz cheese
3-4 oz veggies with 1-1.5 oz dip
5-6 oz fruit
2-3 oz pickles

When I calculated for example the cheese required for 200 works out to 31kg for approx $345 - does this make sense?

Hi Debbie,

I spoke with our executive chef regarding your question and his rule of thumb is 1kg per 25 guests. Now, I'm a big cheese eater and would get 1kg for 5-10 of my guests. If you know your group will eat a lot of cheese then go with the larger quantity. If your not sure then go with our chef's rule of thumb.

So does that mean that the other quantities are also on the high side as the cheese one way - 31kgs compared with 8kgs?

Hi Debbie,

Take a look at the large platters of fruit and veggies at the grocery store. You'll want to get at least 5 of each of these platters for the fruit and crudite. If you think there would be too many pickles grab a couple of jars of 3 or 4 kinds from the store and 5 - 6 containers of sour cream to make the dip for the crudite.

Hi,

The purpose was to do the trays myself in order
to keep costs down - so trying to figure out
how much of the raw ingredients to buy.
