I, along with a friend, am preparing some appetizers and side dishes for a wedding rehearsal dinner cookout. They want fruit skewers and cream cheese dip, chicken salad served in cherry tomato cups, and a cheese tray for the appetizers. We are making potato skins, tossed salad, and macaroni and cheese for the side dishes. There will be 40 people attending. Will everyone want one of everything? How much of the appetizers and side dishes should we make?

We would suggest the following portions per person: 1-1.5 fruit skewers, 2-3oz of cream cheese dip, 5-6oz of chicken salad, 5-6oz of cheese, 2-3 potato skins, 4-5oz of salad and 4-5oz of macaroni and cheese
