Food Quantity for Luau

We are having a wedding reception luau with 250 RSVPs. We are preparing a bountiful table of fresh fruits and vegetables with dips, cheese balls and crackers. Following cocktail hour, we will serve smoked pork, pinapple chicken skewers and meatballs with red potatoes and green beans, 3 salads and rolls. How much food do I need to prepare? Thanks in advance for your help!

We would suggest the following for your luau : for the proteins, base the amounts on 10-12oz pp. The skewers and meatballs are more popular so get approx 4oz of each per person and 2oz of potatoes per person. For the nibbles have approx 3-4oz in total per person, salads have approx 5-6 large bowls of each and 1-2 bread rolls per person.
