Buffet and Drinks

I am having a 60th birthday party. Buffet style. How much food, beer and wine do I need for 75 people. Chips, dips, pretzels and veggie platters to start. Lasagna, Sausage and Peppers, Chicken Piccatta with Penne Pasta and a 6 ft sub. How much lasagna, sausage and chicken? Not heavy drinkers...how much beer and wine? Thanks for the help. We would suggest the following portions (approximation) for your event: 3-4oz Chicken per person, 3-4oz lasagna per person, 3-4oz of sausage per person. We estimate 1 drink per person per hour, for the light drinkers we would cut this estimate in half. If your event is 4 hours, we suggest 60% beer 3-4 cases of beer and 12-14 bottles of wine.
