We are hosting an outdoor fall wedding at our home for just under 200 people. We also have undertaken the task of preparing all of the food. My question is... can I make pigs in a blanket and mini quiche appetizers ahead of time and freeze them to be reheated before the event? If so, do I cook the appetizers before freezing? Also, we are serving seasoned potatoes, how many pounds of red skinned potatoes will I need?

You can make pigs in a blanket and freeze them to be reheated for your wedding. You can eithre cook them ahead of time or cook them on the day you need them. We would not suggest making quiche ahead of time and freezing, they will not be eadable when you thaw them. We suggest having 4-5oz of potato per person.
