Assuming there are other dishes to accompany the potato salad, I would recommend 50 lbs of potatoes, 4 dozen eggs, 10 liters mayonnaise, 10 bunch green onion and 3 liters relish. All of these suggestions are guidelines only - adjust according to your personal tastes. It is best to make a batch then add other elements like lemon juice or vinegar, parsley, roasted peppers, green peas or corn for a little extra color and taste.
