If you are making 250 chicken salad sandwiches, I would portion 3 oz chicken breast per person, approximately 50 lbs., then add onion, celery, mayonnaise and any other ingredients you prefer. If you are unsure, buy one or two breasts, make the chicken salad, create the portion size you would like and then multiply.
